From the Caposelvi vineyards, La Tentazione (originally named Ceppeto Chianti Classico Riserva) showcases the Sangiovese grape blended with a touch of Merlot. The grapes flourish in clayey soil scattered with stones, at an elevation optimal for Sangiovese, providing intense aromas and concentrated flavors. This combination of ideal terrain and rigorous vineyard management—including careful canopy management and selective harvesting—ensures the production of superior quality grapes.
Vinification and maturation
The wine undergoes a detailed and controlled vinification process led by enologist Gianfrancesco Paoletti and cellar manager Roberto Droandi. After destemming and gentle crushing, the grapes are vinified in medium-sized vats with extended maceration and frequent délestage to enhance flavor and color extraction.
Following vinification, the wine is aged for 18 months in French oak barriques, with a mix of new and second-use barrels to impart complexity without overwhelming the Sangiovese's natural flavors. Finally, the wine matures for an additional 12 months in the bottle before release.
It is recommended that this wine be aged for an additional 10-12 years to fully appreciate its evolving nuances.
