Vinification and Ageing

After the initial fermentation in stainless steel, the cuvée is bottled in spring, with selected yeasts and sugar added for the second fermentation, adhering to the traditional bottle fermentation process. The wine matures on the lees for an impressive 48 months, acquiring complexity and depth. This meticulous aging process allows the Alta Langa 2019 to develop its distinctive profile, which can be enjoyed immediately or cellared for up to ten years to explore its evolution.
